<li>1 pineapple (whole fresh with leaves)</li>
<li>2 tbsp vegetable oil</li>
<li>1 small onion finely chopped</li>
<li>2 green chiles seeded and chopped</li>
<li>1 cup lean pork, cut into small dice (8 ounces)</li>
<li>1/2 cup cooked shelled shrimp or prawns (4 ounces)</li>
<li>3-4 cups cooked cold rice</li>
<li>1/4 cup roasted cashews (2 ounces)</li>
<li>2 scallions chopped</li>
<li>2 tbsp fish sauce (from Asian Market)</li>
<li>1 tbsp soy sauce</li>
<li>10-12 mint leaves shredded &#8211; for garnish</li>
<li>2 red chiles, sliced into rounds &#8211; for garnish</li>
<li>1 green chile, sliced into rounds &#8211; for garnish</li>
</ul>
<p><strong>Directions:</strong></p>
<ol>
<li>Cut the pineapple in half lenghways and remove the flesh from both halves by cutting round the inside the skin. Reserve the shells. You will need about 1/2 cup (4 oz) of fruit (keep the rest for dessert).</li>
<li>Heat the oil in a wok or large frying pan. Add the onion and chiles and stir-fry for about 3-5 minutes until softened. Add the pork and cook until it is browned on all sides.</li>

<p><strong>Ingredients:</strong></p>
<ul>
<li>1 c. soft margarine</li>
<li>1/2 c. sugar</li>
<li>1 egg</li>
<li>2 1/2 tsp. vanilla extract</li>
<li>3 1/4 c. flour</li>
<li>1/2 tsp. baking powder</li>
</ul>
<p><strong>Directions: </strong></p>
<ol>
<li> Preheat oven to 425 degrees Fahrenheit.</li>
<li>Mix margarine, sugar and egg until smooth.</li>
<li>Add other ingredients. Mix together to form a ball of dough.</li>
<li> Lightly flour wooden board or flat surface with rolling pin, roll half of dough very thin. Use a circle cookie cutter to cut dough.</li>
<li> Put a fortune in each one off to one side. Fold circle in half and then half again. Pinch it to close.</li>
<li> Bake cookies for about 10 minutes or until lightly browned.</li>

<div>Combine oyster sauce and sesame oil in a bowl, set aside.</div>

<div>Wash broccoli and peel off tough skin on stems. Remove flowerets from stems and cut into bite size pieces. Cut stems diagonally into thin slices.</div>

<div>Bring 8 cups of water, vegetable oil and salt to a boil in a large pot. Plunge broccoli into boiling water and cook for 4 minutes or until crisp-tender.</div>
</li>
<li>
<div>Drain well and place on a platter. Drizzle with oyster sauce, sesame oil mixture.</div>

<p><strong>Ingredients: </strong></p>
<ul>
<li>3/4 lb. boneless pork loin</li>
<li>5 slices bacon</li>
<li>2 eggs, beaten</li>
<li>1 c. chopped fresh mushrooms</li>
<li>1/2 c. thinly sliced green onion</li>
<li>3 c. cold cooked rice</li>
<li>1/4 c. soy sauce</li>
</ul>
<p><strong>Directions: </strong></p>
<ol>
<li>Partially freeze pork. Thinly slice across the grain into bite-sized strips; set aside.</li>
<li>In a large skillet or wok cook bacon until crisp. Drain bacon, reserving 3 tbsp. drippings; crumble bacon on paper toweling.</li>
<li> Cook eggs in 1 tbsp. hot drippings for 2 minutes or until set; remove and set aside.</li>
<li> Add 1 tbsp. drippings to skillet. Stir-fry half of the pork till browned; remove. Stir-fry remaining pork; remove.</li>
<li> Add the remaining drippings to wok; stir-fry mushrooms and onion 1 minute or until tender.</li>
<li>Stir in bacon, egg, pork and rice; cook 2 minutes, stirring gently.</li>
<li> Pour soy sauce over pork-rice mixture; cook 3 minutes more or until heated through.</li>

<div>1 c. sugar</div>
</li>
<li>
<div>1 c. water</div>
</li>
<li>
<div>1 c. vinegar</div>
</li>
<li>
<div>1 tbsp. dark soy sauce</div>
</li>
<li>
<div>2 tbsp. cornstarch</div>
</li>
<li>
<div>2 tbsp. cold water</div>
</li>
<li>
<div>1 c. plum sauce</div>
</li>
</ul>
<p align="left"><strong>Directions:</strong></p>
<p align="left">1.Heat pineapple (with syrup), sugar, water, vinegar and soy sauce to boiling.</p>
<p align="left">2.Mix cornstarch and 2 tbsps. water; stir in pineapple mixture. Heat to boiling, stirring constantly.</p>
<p align="left">3.Cool to room temperature; stir in plum sauce. Cover and refrigerate.</p>
<p align="left">
<p align="left">Serve with appetizers and dim sum.</p>

<li>3/4 lb. round or rump steak, thinly sliced across the grain</li>
<li>1 tbsp. soy sauce, reduced soy can be used</li>
<li>1 tbsp. sugar</li>
<li>8 fresh mushrooms, thinly sliced</li>
<li>1/2 lb. bean sprouts</li>
<li>3 scallions, sliced into 1&#8243; pieces</li>
<li>1 bok choy, sliced into 1&#8243; pieces</li>
<li>2 c. beef stock</li>
<li>2 tbsp. cornstarch</li>
<li>1 tsp. sesame oil</li>
<li>2 c. noodles</li>
<li>2 tbsp. peanut oil</li>
</ul>
<p><b>Ingredients:</b></p>
<ol>
<li> Combine beef, sugar, soy sauce, and sesame oil in a bowl, and mix well. Set aside, and marinate for at least 1 hr.</li>
<li> Wash and slice the mushrooms, including stems. Soak, rinse, and drain the bean sprouts.</li>
<li> Cook noodles in boiling water according to pkg. directions. Drain well.</li>
<li> In a separate bowl, mix the cornstarch and beef stock together.</li>
<li> Drain the beef, reserving the marinade.</li>
<li> Heat the peanut oil until it sizzles, then stir fry the beef for 4-5 mins.</li>
<li> Add the cornstarch mixture, and mix well. Bring to a boil, and stir constantly.</li>
<li> Add all the vegetables, except the bean sprouts, and simmer for 3 mins. longer.</li>
<li>Add noodles, and bean sprouts, to wok, and mix well, until all is hot and bubbly. Serve.</li>

			<content:encoded><![CDATA[<p><b>Ginger root &#8211; </b> Knobbly and light brown, ginger root is u sed widely in Chinese food for its sharp, peppery, spicy, slightly sweet flavor and is<img src="http://www.chinesefood-recipes.com/images1/Ginger.jpg" alt="Ginger root" align="right" height="82" width="125" /> especially good with fish as a &#8220;de-fisher&#8221;. Ginger, when used in cooking is sliced into 1/16 inch slices. The slices are usually not eaten. When used for dipping together with vinegar, it is in fine shreds or fine dots and as much of it as will stick to the dipping piece will be eaten. Fresh ginger is peeled before using. The younger, less pungent ginger is best used in stir fried or steamed dishes while the harsher peppery mature ginger is good for braised dishes. It can be obtained from many supermarkets and Asian markets and is best kept in the refrigerator vegetable compartment, tightly wrapped in a paper towel placed inside a plastic bag. <a href="http://www.chinesefood-recipes.com/food_articles/ginger_medicinal_values.php"></a></p>

<li>3 lbs. chicken drumettes</li>
<li>1/3 c. soy sauce</li>
<li>2 tbsp. salad oil</li>
<li>1 tsp. salt</li>
<li>1/2 tsp. ginger</li>
<li>1/2 tsp. garlic powder</li>
<li>2 tbsp. chili sauce</li>
<li>2 tbsp. sherry</li>
<li>1/2 c. honey</li>
<li>5 drops Tabasco sauce</li>
</ul>
<p><b>Directions: </b></p>
<ol>
<li>Combine all ingredients, except wings in a 15&#8243;x10&#8243; pan. Arrange wings in single layer in marinade. Cover and refrigerate several hours or overnight, turning pieces once or twice.</li>
<li> Bake at 375 degrees Fahrenheit for 1 hour or until tender, turning a few times as they cook.</li>
